ROANOKE, Ind. (www.incnow.tv) – A Roanoke woman turned a lifestyle change into a growing business.
"I went to two Celiac support group meetings and the demand was overwhelming," said Melissa Paul, Owner, Good Grains Gluten Free Bakery.
Melissa Paul started Good Grains in Roanoke. It’s a 100% gluten free bakery. She started the business so she could share her gluten free baked goods with others in her community with Celiac Disease. It’s a medical condition where the protein found in wheat, barley and rye can actually damage a person’s small intestine.
Many people avoid gluten because they have Celiac Disease, but there are many health problems stumping doctors so some turn to gluten free diets in hopes it can make them feel better. For Melissa's now 11-year-old daughter it has made a world of difference.
"It was getting pretty scary with her. We'd had her down to Riley and some different things trying to find out. And when the school is calling four days a week to come get your child because they're sick, there is an issue,” said Paul.
Going gluten free helped Melissa and her entire family feel happy and healthy again.
"It's been nice to have some of our unexplained health concerns alleviated,” said Paul.
When Good Grains first opened Melissa saw it as a part time thing, but that quickly changed.
"It was pretty obvious that the need was more than I anticipated. I really thought it would be two to three days a week that I would go into town here and work out of the kitchen for a bit,” said Paul.
But instead she was putting in 18 hour days. Now she's expanding her business by moving into a larger space, and plans to bring on her own staff.
"It's really been a blessing,” said Paul.
Melissa says she is working on moving into the new location and expects to be operating out of the new location by early June. The new location is located behind the Cottage Events Center just off U.S. 24 in Roanoke.
