Baked Ranch Scallops: Air Date: 10/22/2007


4 to 6 servings

1 (1-ounce) envelope ranch salad dressing mix
1/2 cup dry bread crumbs
1 pound bay scallops, rinsed (see Note)


  1. Preheat the oven to 350°F. Coat an 8-inch square baking dish with nonstick cooking spray.
  2. In a large resealable plastic storage bag, combine the dressing mix and bread crumbs; seal and shake to mix. Add the scallops and toss to coat.
  3. Place the scallops in a single layer in the baking dish and bake for 13 to 16 minutes, or until the outsides are golden and the insides are firm and white.

NOTE: Bay or sea scallops will work fine here. I prefer the smaller bay scallops because I think they're sweeter. If you do use sea scallops, add an additional 5 minutes to the baking time.
